These things are so damn tasty, it's fu%&ing unreal. I use them in endless ways: thrown in salads, great in sandwiches, delicious chopped up and tossed with pasta. My favourite way to eat them though is on a toasted piece of bread, smothered with goats cheese.
They're sweet, they're delicious and they're damn easy to make. Just make extra, your heifer friends will gobble them down.
15 roma tomatoes, cut in half
extra virgin olive oil
salt & pepper
basil leaf, for garnish
Place roma tomatoes, cut side up on baking tray lined with parchment paper.
Brush each half generously with extra virgin olive oil and season with salt & pepper.
Place tomatoes in 350 degree oven for 2-3 hours until they've reduced in size by 2/3 and start to blacken.
Remove from oven and top with fresh basil.
