Oven-roasted Tomatoes

These things are so damn tasty, it's fu%&ing unreal. I use them in endless ways: thrown in salads, great in sandwiches, delicious chopped up and tossed with pasta. My favourite way to eat them though is on a toasted piece of bread, smothered with goats cheese.  

They're sweet, they're delicious and they're damn easy to make. Just make extra, your heifer friends will gobble them down. 


  • 15 roma tomatoes, cut in half

  • extra virgin olive oil

  • salt & pepper

  • basil leaf, for garnish 


  1. Place roma tomatoes, cut side up on baking tray lined with parchment paper.

  2. Brush each half generously with extra virgin olive oil and season with salt & pepper.

  3. Place tomatoes in 350 degree oven for 2-3 hours until they've reduced in size by 2/3 and start to blacken. 

  4. Remove from oven and top with fresh basil.

To enjoy these at their finest, keep it simple. Toast a fresh baguette and spread a generous potion of fresh goat cheese over top.  Place an oven-roasted tomato on top and garnish with a basil leaf.
