Guacamole And Black Bean Pasta

I love fast, easy, and filling dishes, and this is the epitome of fasteasyfilling deliciousness. Guacamole doesn't get its due as a main dish-maker, but in this recipe it's crucial. Everyone makes guacamole differently, so alter the ratios accordingly...I love my guac intensely limey!



For the black beans:

  • 1 large onion, diced

  • 2 cloves of garlic, diced

  • Smoked paprika

  • Chili flakes

  • 1 can black beans, or rehydrated dried black beans

  • Salt

For the guacamole:

  • 2 large avocados

  • 2 cloves of garlic

  • 1 lime

  • 1/2 tsp cumin

  • 1 tsp paprika

  • 1 tsp chili flakes or fresh chiles, to taste

  • salt

Other (important) stuff:

  • Pasta

  • Tomatoes

  • Cilantro

  • Lime


  1. Start boiling a pot of salted water, more than enough for your pasta. Add pasta when it feels right (probably when it's boiling).

  2. Prep/chop/open all your ingredients (i.e. mise-en-place .... just do it! Seriously. Do it.)

  3. Cook beans.

    • Put onion and garlic in oil in pan at medium-high heat until browned

    • Add spices, about 1 minute

    • Add black beans until heated through

  4. While onions/garlic are cooking above, make your guacamole

    • Add all guacamole ingredients (avocado, garlic, lime, cumin, paprika, chiles, salt)

    • Blender-ize it 

  5. Chop up tomatoes, cilantro, add salt.

  6. Mix guacamole and pasta, top with beans and tomatoes, a splash of olive oil, and a generous squeeze of lime!
