Guacamole And Black Bean Pasta
I love fast, easy, and filling dishes, and this is the epitome of fasteasyfilling deliciousness. Guacamole doesn't get its due as a main dish-maker, but in this recipe it's crucial. Everyone makes guacamole differently, so alter the ratios accordingly...I love my guac intensely limey!
For the black beans:
1 large onion, diced
2 cloves of garlic, diced
1 can black beans, or rehydrated dried black beans
For the guacamole:
2 large avocados
2 cloves of garlic
1/2 tsp cumin
1 tsp paprika
1 tsp chili flakes or fresh chiles, to taste
Other (important) stuff:
Start boiling a pot of salted water, more than enough for your pasta. Add pasta when it feels right (probably when it's boiling).
Prep/chop/open all your ingredients (i.e. mise-en-place .... just do it! Seriously. Do it.)
Put onion and garlic in oil in pan at medium-high heat until browned
Add spices, about 1 minute
Add black beans until heated through
While onions/garlic are cooking above, make your guacamole
Add all guacamole ingredients (avocado, garlic, lime, cumin, paprika, chiles, salt)
Chop up tomatoes, cilantro, add salt.
Mix guacamole and pasta, top with beans and tomatoes, a splash of olive oil, and a generous squeeze of lime!
