If you're like me that gets the saliva flowing preeeetty quickly. I love mushrooms and if you do too - you're sure to enjoy this. The mushroom béchamel is packed with flavour thanks to these guys:

Dried mushrooms are your friend. They're like concentrated mushroom goodness. A bit pricey, but don't forgo them. They're the foundation of all things tasty. And added to POUNDS of mushrooms and onions you get a rich sauce.

Fresh out of the oven, it's not pretty. I was going to wait to post this until I got some better photos to share with you guys but I couldn't resist. Here it is in it's disordered, delectable goodness fresh out of the oven:

Hell. Yes. And when you sit down:

A few notes. One. Any mushrooms will do - so if you can't find one or the other, just replace them. Experiment. See what you like. Two. To make this completely vegetarian, substitute vegetable broth for beef. I've turned a couple heavy meat-eaters with this dish. It's so rich and tasty they don't miss the meat.
