Who doesn't love shrimp? They're damn tasty. Dip them in beer batter, dredge them in coconut and they're REALLY damn tasty. Crunchy, sweet and succulent - these are scrumptious.
Start with freshest shrimp you can get. Here in land-locked Alberta, that means frozen (sad.) One day I'll live by an ocean... until then, frozen still taste damn delectable! After a quick dip in a simple beer batter and dredge in coconut, you're left with this:
You're almost there! (told you this was easy.) These can be thrown in the refrigerator until just before ready to eat... OR (if you got fresh shrimp) they can be frozen like this until you're ready for the fry.
... and you've made it. Better than any you could have in a restaurant, these are crunchy and sweet from the coconut, the shrimp make it tender and moist. I guarantee you will love these. Only trouble you might have is resisting eating 20 (or so...) like I did...
