This is one of my all-time favourites. Not my friends, not my families, MINE. I LOVE THEM. And it's all thanks to braising. It's miraculous. I love this method of cooking so much I chose it as part of the namesake for this website. This recipe is a perfect example of exactly what it can accomplish. Moist, tender, succulent, fall-off-the-bone meat PACKED with flavour. AND it's so, so simple.
In a way, I admire short ribs. Despite the long and slow heat I (and soon you) subject them too, they hang on to that bone for dear life. And usually by just a thread, for hours. That's resilience.
Too bad all that work is for nothing, dumb short rib.
These always please a crowd - sticky, sweet & savoury - I've never had a complaint (except from vegetarians... sorry guys!). Make them tonight, they'll be a hit.
